What the work involves
Main duties
- Cut, bone and trim standard and custom cuts of meat, poultry and fish
- Prepare meats for display, wrapping and delivery
- Tie and shape roasts and package fresh, frozen or prepared products
- Track inventory and sales records and judge product freshness
- Follow HACCP, CFIA and other food safety standards
- Supervise or train other butchers and meat cutters (head butchers)
